I love beets but I'm always too lazy to fuck around with how messy they are. I like borscht and pickled beats, but they're fine roasted (and yes, usually in salads). The French definitely wouldn't be the first place my mind would go when I think of beets, though.

Beetroot Tzatziki is pretty great on just about anything

just great it, chuck it in some yogourt with the usual suspects like minced garlic, mint, lemon zest & juice, salt, pepper, olive oil, that kinda stuff. Look up a recipe if you want but you can just wing it and get a really nice dip for bread or on meats or on fritters or whatever it's good stuff.

my favourite recipe proper might be my great-grandmother's Bigos (Polish hunter's stew)
sour and fresh cabbage, boar, smoked pork, turkey, beef, and goat with a few wine fruits, allspice, and bay
the key is to cut and cook off your meats in such a way that they end up finished at the same time but still somewhat distinct. It starts off good, but after two or three days of reheating comes into it's own as a sort of cabbagey meaty mess that I feel I'll never quite master

eat them raw like apples. Rainbow beets are delicious in salads. You can also sautee them a little, smoke the edges and pair it with fish.

My favorite beet dish is beet and burrata salad with pistachio vinaigrette. It's the first thing to pop up when you google beet and burrata salad.

Beets are suppose to be pretty good for you. I've gotten into a lot of Russian meme videos lately and I got curious and tried Borst for the first time and was pleasantly surprised.

It's basically beet juice soup with chopped up beets and carrots and onions and shit. Not bad with some buttered bread.
