I'm cooking a whole Turkey right now, but I'm not sure what I should do with all of the organs. All I see online is suggestions for giblet gravy. What should I do with the neck, liver etc though? There must be something good, right?

liver=dice, coat in flour, pan-fry with onions, cover just barely in cream&broth, add a dash of lea&perrins sauce, simmer for 1/2h. serve over mashed potatoes or buckwheat.
giblets: what are they? stormachs, kidneys, hearts and lungs? mince them (or better yet, chop very finely) and do turkey "haggis" balls.
