Food standards being higher means it's safer at less than well done, but in China or Thailand that's probably not the case which carried over even if they move to another country. Even pork is safe to eat at medium temperatures because of better sanitation and farming practices. It just depends on the source.

The chinese places cook them whole right? Whereas a french style bistro will do breasts individually to med rare, and confit the legs to well done.

It's safe to eat the legs med rare, but they're full of connective tissue and stuff and so they're tough and kinda nasty like that. So if you do a whole duck it HAS to be well done. French will do a whole duck well done also.

Depends on the country. Western countries generally have high standards for food safety so you can probably eat even chicken medium rare. In the developing world you probably want to cook the food until the inside is as dark as the population.

ground meat is more inheritantly risky to eat mid rare than something like a steak, but either should be fine.
