Just reread that you make it strong so there's that.
But that amount of sweetness/sugar/cream seems to defeat the coffee, doesn't it?

I used to love Frappuccino style so I get it but kind of drifted away from the entry level candy-coffee.

It's great to cook with. Got a cookbook as a gift specifically for using coffee in recipes and it's great. They all call for the strong stuff (except ice cream).

Ok.
Thanks for asking... Glad to see somebody's serious.

I would suggest substituting it for liquids in meat dishes. The "darker" ones work best like beef, lamb, etc...

Marinades.

If vegetarian, it works well in pasta dishes (not so much stir fry, though).

Breads are a definitely a to-do.
I don't bake cakes but that seems to be the most popular.

Here's a link I just looked up that would give you a good idea of which direction to go:

https://archive.lib.msu.edu/DMC/sliker/msuspcsbs_maxh_cheeknealc12/msuspcsbs_maxh_cheeknealc12.pdf

It's not the one I have but was published by Maxwell House (by the looks of it, in the late 70s / early 80s) and is pastry-centric.

I always loved plain-old-meat-loaf made with (a strongly brewed) coffee.

I'll see if I can find something more specific but that pdf link looks like a good starting off point.

I'm sure there are plenty of resources on-line that I haven't seen yet...

So for your marinades you're just brewing strong coffee? Or do you use the grounds in some sort of sauce base

>>11744054
Sorry.
I didn't clarify that (no pun intended).
I use brewed and add spices / herbs for a marinade. Cinnamon, cardamom, nutmeg, rosemary, etc... all work well for chicken dishes.

Beef, I will use onion, garlic pepper, or whatever is appropriate for the dish. Stroganoff is going to call for something different than a Bolognese. But using coffee is kind of a nice addition. Also when it's all cooked down, the coffee flavor isn't that strong.

An example might be something like this:
Shallot (or any kind of onion), garlic, coffee, vinegar, mustard, brown sugar, oil, about 1 tsp. or pinch of black pepper in a bowl and soak something like steaks in that for a few hours or about a day.
Grill.
???
Profit.

Haven't tried it on fish, yet.
I imagine something like swordfish or shark might work well with cilantro and a bit more acid like lime or lemon. I know some folks like to drink their coffee with lemon juice but I never got into that.

I don't use the grounds afterward, except for composting. And I've heard mixed opinions about that with nitrogen content in the soil. I'm no chemist so don't know if it's good or bad...

>> No.11744140

>>11744054
>>11744126
I suppose you could use the grounds as a sauce base to make it strong but I would strain them. Because... coffee grounds. But if you want it concentrated and bitter then yeah... better than brewed. Unless you're doing it cowboy style or french press where you can just let them soak and / or boil to your liking.

It's up to your personal taste, Anon.
Trial and error, I guess.

Too much hard drinking on my end screwed up my tummy.
I remember bringing in an espresso machine to the office and our department drank that stuff all day long. Delivering reports to other offices was quite the task because it was like being drunk. The feeling of floating around and being discombobulated was weird; no control of motor skills.

I don't know what kind of damage that does to ones' system but I am not doing that again.
Once was good enough.

>it was like being drunk. The feeling of floating around and being discombobulated
I kind of like that. Actually being drunk usually makes me feel unhappy because I normally want to be active and doing something, but alcohol makes me feel tired. I can still function while being coffee/tea "drunk" even though it feels similar.

Doing it that often with large quantities probably isn't good though. You're most likely under toxicity levels but having that much, that often, probably isn't good for your sleep, blood pressure, etc. I just like to have a strong cup of green tea or even hot chocolate once in a while now to keep my tolerance low and not need large amounts to get that feeling. Green tea and chocolate seem easier on my stomach.

I think it might be the roasting process of coffee that causes problems, but I haven't tried light roasts or green coffee to confirm. I think we posted this before, but my stomach is still fucked up from drinking coffee over 2 months ago, even though it's improving, but I'm still wary of trying anymore coffee.

Well, you're definitely more alert on coffee than alcohol. I can attest to that. But the out of control part is real.

I figure if I were to keep that up I might end up with heart palpitations, like you say with the blood pressure.

Light roasts have slightly more caffeine content. I don't know anything about green.

2 months ago is a long time to be messed up with coffee, I think. But I don't know. Ulcers could play a part in that, I suppose. I had tea last night and was up until still now, over 18 hours later. I'd given up caffeine in those doses for so long it actually worked like a drug is supposed to! Aside for an occasional soda, I've abstained and I'm glad to say that, when you need it after going without, it does work (like if you need to drive long distances over night or something).

Light roast with a dash of milk.

My family uses them and they stink to high heaven and it makes me want to puke in the morning (that's probably the hangover) but I *LOVE* the French press.

You get to do it exactly how you want and the glass and metal are guaranteed clean because I cleaned it. I'd bet your right with that no-cleaning thing.

I get it with the milk. I do like whole milk with coffee 'cuz it seems to cut the tannins but it also does get a bit of a "film" on the palate.
If available, I'd put a dollop of vanilla ice cream in with my coffee, though...

I suspect that it's because you can never really properly clean the plastic part that houses the filter. Constant stream of boiling hot water and plastic parts don't mix too well.
I used to like cream or whole milk in my coffe too, but as I said that after using oat milk for a while, mixing regular milk with a hot beverage seems to make it taste like cheese and I find that disgusting now.
My french press is stainless steel and doesn't seem to catch any taste and I can actually clean it properly whenever I feel the need.

>>11747024
What's oatly coffee? Is that what was the above Anon was talking about; with the oat milk?

>>11747046
I usually just get a local company's house roasted small bag. Prices vary wildly. For instance, if they're getting Jamaican Blue Mountain it's gonna be expensive because people think that's the best but it's not necessarily true. Jamaicans don't even really drink that because it all gets exported to rich whitey countries. A simple light roast is usually what I go with. It's more variable in that you can get a great caffeine fix from it. But it you want to use it for cooking you can extend the roast in a toaster for a darker flavor. -- I think that depends on the oil content, though.
For a price range, I'd say go with what's nearby and then experiment and work up to what works for you. Everybody's different in their tastes.

There are usually two claims made by people who advocate coconut oil. The first is that people who eat coconut heavy diets are healthy. The second is that even though coconut oil is mostly saturated fat, it contains MCTs, or medium-chain triglycerides, which are healthy compared to long chain triglycerides.

But! The study on coconut-based diets that are most often cited talk about an island people who get about 10-15% of their calories from coconuts, while the rest is mostly plant-based which is proven to reduce cholesterol. On top of that, they eat the whole coconut. The fiber and plant proteins in coconut have a moderating effect on how it affects your cholesterol. In other studies where coconuts were a greater percentage of the local diet (upwards of 60%), they found uncommonly high cholesterol despite still eating the whole coconut.

The argument about MCTs is also inaccurate. Of the total fat content in coconut oil, only about 10% is MCT, where almost 60% of the fats are long-chain. Whoops!

Here's the video in question: https://nutritionfacts.org/video/what-about-coconuts-coconut-milk-and-coconut-oil-mcts/

I use a couple of websites but I find myself sourcing nutritionfacts.org a lot. The guy has been in the nutrition game 30+ years, has hundreds of videos sourced from tens of thousands of studies, accepts no lobbying or corporate funding, and any money from his books and speaking engagements are donated to charity. That's the kind of impartiality I'm looking for when I want to learn about my health.

Currently: Cold Brewed light roast, in a 1 part concentrate to parts milk, no sugar.

Previously: french press light roast for ~3 minutes with sugar or honey, no milk.

I go with cold brew on work mornings because I get up too late to make coffee and I'm not going to spend the money on an automated drip system.

Not that guy, but thanks, as well.

I am constantly hearing this stuff (MCT / coconut oil) being shilled and bandied about on podcasts and so-called nutritionalists raving about it but I never really bothered to look it all up. Some people I do respect swear by putting a little oil slick on the top of their morning coffee.

The funding aspect of that website is fairly compelling.

And yeah, growing up with "healthy choices" turned out to be a lot of bloviated marketing from my youth.
Ugh!

And bad science is just ...inexcusable.

All the relatives that I have who go off to some new-age health resort or ashram and come back with hippie-esque ideas about what I should be ingesting for my chakras to work drives me insane when I've got all these scientific journals for pharmacology and stuff (my father is a retired pharmacist but we still subscribe to the journals because they're interesting and relevant).

>> No.11748538

>>11748460
Absolutely. Folks on here, reddit, and other social media have fallen into the habit of simply linking a study because they read the abstract and maybe the conclusion. It simply isn't enough to just read a study. I have to see who provided the funding and compare against other studies. I don't trust blog posts or articles without sources. Too much "common knowledge" of nutrition is simply bad science from cherry-picked research and poorly framed studies.

Consider the research published by the Tobacco Institute. Today with what we know now, it's laughable. Benefits to tobacco? It was founded by big tobacco and they published "research" for 40 years before being dissolved. We nod our heads and say oh, of course, but miss that same lesson when it comes to other research. Similarly in nutrition, it's astounding how many studies praising the benefits of dairy, eggs, beef, etc. were funded and researched by those with interests in... dairy, eggs, and beef.

I love that the guy behind nutritionfacts.org never looks at research in isolation. It's always compare and contrast, looking at meta-studies that bring it all together. He isn't afraid to say "we don't know," he isn't afraid to say maybe or might, he isn't concerned about preserving conclusions from decades ago, and he isn't afraid to be blunt about the realities of what we're putting into our bodies.

That is fascinating about framed studies. The food pyramid for the US was pretty much the same way: designed by a group selling their cereal. Nutritionfacts.org looks like it'll be right up my alley (and thanks again for that).

One of the good-but-frustrating things about those pharmacological journals is that there is no one big article; it's lots of mini-reports over the span of years and one just has to pay attention over time. And yeah, they will re-nig on some of the published material later on when the results of studies become more conclusive to a particular subject but I think it's more of that there are multiple outcomes for different people being studied. I do love when sources are cited and you can actually look up the findings no matter how small or minuscule -- it all adds up to a bigger picture.

Dairy, eggs and beef... I'm not a vegan and still enjoy them but I've got to watch the old ticker since my family has a history of heart disease.

Gonna have to try out that oat-milk stuff for when I want to tame down the coffee.

At work, we always pooled in to buy a bag of beans and grind them on the spot, cup for cup. Put the grinds (usually fine) into a filter and that went into a funnel placed over our cups and just pour hot water from the water cooler (ironic, I know) into it until our oversized mugs were full.

Had to be careful because if it was too fine of a grind I'd get mud at the bottom of my cup. Even through the paper filter.

From online:

"Technically, moka pots don't make espresso, since espresso must actually be brewed under at least 9 bar (130.5 PSI). But they do make a strong, satisfying cup of coffee. ... Stovetop moka pots aren't foolproof. Boil the water on too high of a heat and you can cook the coffee, which leads to a burnt taste."

Espresso machines, in my experience, have always been steam rising up and then DOWN through the grounds rather than up through them.

I dunno, too strong of a coffee could make me hurl and give me seizures.

"Raw" milk is your best bet for that. If you can get it. Some places don't allow for that. Yeah, check with local farms. Small ones are best for getting raw milk. Some states, it's illegal to sell that and I don't know about the Omaha area. It's spotty in California where I'm at but there are so many small farms in Northern California that you can just talk to them at farmers' markets and most will deliver on a private level.

When I was in Sweden they used Mellanmjölk that literally means “middle milk” on their cereal or musli. Filmjölk is another variation. That's where I got the yogurt idea from. It's the same concept... meaning not quite milk and not quite yogurt but right in between. I'm west coast US, California, so my favorites so far have been the Santa Cruz Roasting Company (they have an on-site roaster and lots of selections), Mother Lode Coffee Roasting Company (have lots of flavored stuff which I personally skip but the basic straight roasts are there) and I can't even begin with the amount of roasters are in the San Francisco area.

In the morning/day: hot, but cool enough i can take a good sip without burning my toung, black, unsweetened
Sometimes, if i want to stay up to get some work done or something but don't want to be up all night, after dinner i'll mix a 50/50 ratio of hot black coffee with pic related for "dessert." It's like a warm, unset coffee/vanilla custard, but less thick and doesn't have the full load of caffiene regular coffee has.

>> No.11760642

A nice Americano when I'm home,
if outside : the coffee is good, black, if the coffee is bad, two milk, if i already had good coffee and i don't want to get nervous 2 milks.

That's not really an endorsement, anon. Our understanding of nutrition depends more on accumulated test and study results than on personal experience or beard-stroking wisdom.

So coconut oil will give you higher levels of HDL-C (which is good), but levels of LDL-C (which is bad) is comparable to that of olive oil.

still not sure if its worth putting in my coffee but i guess ill start cooking with it more often now.

the other parts of that second article seemed to present no other major differences between coconut and olive oil.

nice article anon, thank you

French press full of black coffee, first cup too hot to sip, last cup ice cold. I kind of like the difference in flavor as it cools down, plus it gets more caffeinated over time so my last cold cup is nice and strong

>> No.11763500

>>11763494
oh and also I'm 90% sure it's just stockholm syndrome from slowly drinking coffee and not wanting to waste the bottom half of the french press every time. Pretty sure it's totally just that I drank it this way enough as a broke student in university that it ended up being my norm.

That and the satisfaction of rolling them for me.
I would get the best tobacco I could find and use the shittiest paper because they held up better.

Take a coffee mug.
Set it aside.
Open Guinness bottle.
Pour into mug.
Best coffee in the morning.

Then I'd move on to the roasted beans.

God, I miss smoking but I do not regret quitting.

>>11765067
Light roast is actually stronger if you're after the caffeine.

>>11764756
A lot of people order online but that's harder to trust as to what you're getting rather than having it in hand to see if you want to purchase. Like in a bazaar.

Actually to clarify, while light roast retains more caffeine than that darker roasts it's minuscule, so if your prefer the darker roast just continue with half a refill and you'll probably get more anyhow.

If you cook with it, won't it change the chemical structure to the bad stuff?
I get it, not being heated up and all but I keep hearing that when you heat those oils up they turn into the bad version for cholesterol.

I know the body will make cholesterol anyway.

Ha! You could say that.

I've still got a father but hardly a father "figure".
We never played catch or build stuff together or anything like that.
He was too nerdy to be bothered, even though he was on a baseball team.

My point was that coffee was great for me in things like math. All of a sudden math made sense after a double espresso mocha. And hanging out with friends recording music was may more productive when we were on caffeine than pot. That's all.

The coffee is made from coffee beans, collected from civet poo. The civets eat the coffee fruit, and the bean does not get digested so passes through, gets collected and made into coffee.
