Should, or should I not ferment? That is the question. I want to experience with some recipes and if I like it then I’ll ferment. What are some interesting ingredients to balance the heat of my sauce? My thoughts:
>anchovy paste
>ginger
>cumin
>honey
>cherries
>powder mustard
>sesame oil
>turmeric
>apple vinegar
>papaya
>guava
>oranges

I'm switching over from my phone to my laptop. Btw, what are the advantages of fermented hot sauce over non, besides "bringing out the flavors".

I also got some tomatillos, I hear they're an important ingredient in Mexican hot sauces, to make it balanced and not a memey "SUPER SPICY GALAPAGOS GHOST REAPER PEPPER HEAT"
