How do you guys cook your steak? I've got some NY strip steaks for tonight and I'm looking to try something new. Normally, I'd use a cast iron skillet, melt a stick of butter in it, season the steak with Montreal steak seasoning, then cook in onions. Simple, but it works for me. How about you?

I do this also in the summer time, except I'll do it on the charcoal for shishkabobs. Tonight we're making proper steaks though.
