How do you feel about wa-handled knives?

Mixed feelings. I think now that Japanese knives are fully mainstream they have become an easy way to hock substandard knives on a gullible public. I also violently dislike polished, stained, lacquered, or inlaid wa handles especially on "rustic" finishes like kurouchi or nashiji. Should be just bare unfinished magnolia wood with a horn ferrule, no exceptions unless you're rocking a honyaki mirror finish.

Also, if there is no machi I am automatically suspicious of it, just goes up there with the finish on that handle. Incoherent message being sent, because it's trying to tick off a lot of boxes in order to appeal to ignorant rubes.

Also, threadly reminder that the mods have german sippy cup knives.

In fact, I do! But I also use western handled knives for 99% of my cooking, generally semi-stainless. I only pull out the wa handles when I'm bored.

Serious question though: what specifically are you worried about with an unfinished handle, when you've already got a knife that's clad in highly reactive wrought iron and a stick tang jammed into a round handle? Are you simply oblivious to the dissonance because you know nothing about knives? Like, were you tricked into buying it? Was it a gift? Or are you just that dumb?

I basically just took to the time to respond to your "Assertions about my sexual preferences" quip, and tried to bring that back to cooking (rabbit gulyas), while hitting on the main theme of this thread (wa handled knives) and the secondary theme (sense and tradition).

Wa or Yo handle or material or finish dont matter a shit anyway if you hold the knife in a proper pinchgrip ... balance and choil and spine are mmore important. Although choil and spine can be DIY rounded without too much diffculty

Of all the knives I've tried, the Winco KC-401 has by far been my favorite.It is a beast in every sense of the word and any concerns I had about it being hard to control were incredibly mistaken.

Thanks! I have several accounts on reddit which I created when the mod here started stalking my IP address range and mass deleting all my posts for about a year. Apparently I really pissed them off. But they seem to have gotten over it or maybe it’s because I dropped my trip. I can resurrect it if you like, but I’m on mobile now, it will have to wait until I get home.

I would experiment with a cheaper one but in general I would only keep either western style knives or asian style since both require their own techniques. Learning the asian style of cutting isn’t hard though. Nowadays the only knives I use is a Chinese clever, bread knife and a deba (short fish knife) but I had a set of wusties for a while before that.
