You should leave the bag open, or better still leave the entire bread open to the air. Have a nice bread "box" with fine sieve opening, allowing air through but not insects.

That's the proper way.

You SUPPOSE to eat bread as fresh as possible, and make them go stale and dry as fast as possible. You then use the dried up part, for other things. Like stews thickener, french toast, etc...

In the UK bread often doesn't come with a clip but with a little bit of tape around the end, once youve torn it open and used it a few times the stickiness of the tape wears off so it's not really possible. Letting bread rise for at least 4 hours reduces the gluten content (just liek ATIs and FODMAP) to a degree making it suitable for even most gluten sensitive people. But you will never get slow baked bread industrially made. If you want to go even further look into old breeds called "Urkorn" over here. Those pre-industrialisation as that manipulated the gran to suit machines, not in the least caring about nurtrients and the consumer.
