Anyone have any experience dealing with vegan diets? I'm seeing this new girl and it turns out shes a vegan.

How annoying is it dealing with finding food to eat. Are there many restaurants that offer good vegan and non vegan choices? When I want to cook a meal for us, is it a bitch to make something good?

With how things are shaping up nowadays, finding vegan options shouldn't be difficult but they are typically more pricey than regular options. So watch your wallet.
But a word of advice is don't force yourself. Don't date a vegan if you're not going to be FULLY comfortable in adapting to that lifestyle. I don't care if her pussy's able to milk your balls within seconds, it's not going to be a good relationship if it's going to be strained on beliefs.

Indeed, vegan people and their diets are very annoying. The fact that she's got an eating disorder already, just assume that she doesn't eat everything vegan either, and has some extreme opinions about what she likes or doesn't like. Defer to her suggestions for something you can try to make for her, until you know her better is the safe answer ,because she could be gluten free.

If you don't want to wait to defer to her opinions? Then, make some homemade candy like date rolls or other item to have on hand. Make or buy a homemade sorbet like lychee sorbet, park in freezer. Then come up with a delicious menu with some asian or italian theme, so you can focus on veggies and beans and fresh herbs.
Green mango or papaya salad, stir fry veggies, steamed rice. Two kinds of indian mains, like some simmered garbanzo or lentil dals, some sauteed veggies, or stuff some dumplings or samosas. Try blistering some edamame with some smoked paprika. Some pot stickers you made with tofu and veggies or beans inside. Make your dipping sauce together.
For italian, you can focus on a lovely roasted veggie marinated spread, grill some red peppers, zucchini, portabellos on your grilll ahead a day, serve with or without fresh cheese, but lots of basil and balsamic drizzle. Tons of pasta options for leaving out the cheese. It's winter squash season, so try your hand at spaghetti squash. You could even make some butternut ravioli, hit it with some frizzled sage leaves. There a ton of Jamaicans who eat vegan, so could do some stews, marinated avocados and fresh fruit, and maybe a homemade bread. Think you could do a good mediterranean spread? Falafel and hummus and all the trimmings?
