Texture. Think about how people pay top dollar for fillet mignon. Any fan of steak will tell you they're not paying for flavor, because if they wanted that they'd get a Rib Eye. They're paying for buttery texture they can cut with a fork (almost). Sea cucumber plays into a Chinese aesthetic of food texture. If you don't get it you don't get it, but like fillet mignon it's more about texture than flavor.

Any animal able to move will feel pain, otherwise it would never be able to move away from things which are dangerous. This is the only reason we have pain receptors. They don'T have to feel it like we do, but if it wouldn't be unpleasant at least, there would be no insentive to move away from it and prevent further contact with said pain source.

And even if they wouldn't feel anything, there is no reason to give them a slow death (as they at least will feel hunger) if you already cutting the shark up. Slicing up it's throath isn't that much of a hassle.

And I'm far away from that as a paleo fag primary living of meat and animal products. It's simply empathy and respect for taking a life. But shitskins don't eve care for human suffering of their own kind, so I'm not the least surprised.

Asian food culture values rubbery texture in a similar way to French and American culture valuing rich and creamy textures (like heavy sauces, desserts, and tender meats). These two values basically contradict each other, though Asians tend to like creamy more than Westerners like chewy. You don't value these textures so you don't see why they would pay so much for them. It's also worth noting that 100g of dried cucumber is actually quite a good amount, because they are practially all water, they are hand harvested by divers (like sea scallops) and are not eaten in large quantities since they are more of an experience than an actual protein or main course.

Sensory nerves =/= pain receptors.
Being able to sense touch and reflexively withdrawing from it does not indicate pain. Even larger animals like lobster have been more or less shown to not experience pain in the way we think of it. They essentially dont have the brain power to waste on detecting varied levels of pain, so a gentle/medium touch feels the same as a solid hit- they both result in defensive action. Things like jellyfish are able to detect touch but effectively have no further nervous system at all. Even single-celled organisms (such as amoeba) show sensation, but cannot possibly feel what you imagine as pain because they dont actually feel anything- they just "do."
