hey /ck/ I rarely ever cross boards but i need help. i wanted to make this recipe tonight https://www.justonecookbook.com/toshikoshi-soba/
i've never made a new year's soba before, i picked up all the ingredients other than kamaboko, which i can't find anywhere, i've been driving around all morning going from store to store and gave up.

what would be a good substitute? an egg? a couple shrimp? an egg and a couple shrimp, is that allowed? or just omit it completely? thank you, lurking for a few mins, your board seems nicer than mine.

Ramen

>> No.11697588

>>11682296
As someone who's frequently in Japan for work-related reasons, I find myself in a certain predicament more often than I'd like.

Most people seem to be under the misconception that sushi is a staple of Japanese meals, or that it's at least consumed in great quantities.
Same kind of goes for ramen.
When I inform people of this, though, I find myself at a loss when having to answer the question that inevitably comes.
>"What do they eat then?"
I have no fucking idea how to explain Japanese food properly. Anything you can say sounds extremely generic and unexciting when you explain it.
Like, "Yakitori" is an entire branch of cuisine on its own, but there's no way of explaining it past "It's skewers of meats and veggies with salt or glaze and, uuh..."
"Soba" is just noodles with dipping sauces.
"Curry" will just evoke indian curry with its name when mentioned.

Japanese cuisine so simple and wholesome, but I can't find a way to communicate that without making it sound bland.

Real talk here, Japanese food is either really bland or unhealthy

Take ramen as an example, a lot of people here prefer it over pasta and the reasons is that there's an insane amount of salt in the broth used for ramen, with the addition of other salty stuff like soy sauce. There's probably your daily recommended amount of salt in a single bowl of ramen.

Another example would be tonkatsu which is fried pork, fattest meat in the average, so you're literally eating fried fat, usually topped with sugary sauce and mayonnaise and served with rice (more carbs)

Not saying it tastes bad but there's healthier alternatives out there that taste just as good, such as homemade tomato sauce pasta

>> No.11698336

>>11698230
That's certainly an opinion based on flawed nutrition knowledge. Despite the food being "unhealthy" by your opinion obesity and heart disease rates are extremely low in Japan.

Bland is also a relative term. Compared to, for example, Indian or Mexican where everything's loaded with 50 spices? Sure. Japanese food when cooked right is properly seasoned, but as a general rule with the goal of bringing forward natural flavors of the main ingredients. Fish is grilled with a bit of salt so you taste the fish. Tempura frying is meant to maximize the natural flavors of the vegetables and shrimp/crab/scallop/fish.

No, for real, tonkotsu ramen has three time the daily recommended amount of salt per serving, look it up

And yes japs tend to focus on the natural flavor of ingredients which results in bland as shit food such as sushi

And when it's not like that, you get pic related. Hmm, yummy.

Why does the mention of Japan or people enjoying Japanese things trigger people on this website like nothing else? It is like people are reacting against then stigma of this place as a weeb website and completely overcompensating. It is pretty pathetic.

>> No.11698966

Maybe if you're only eating the instant shit. Tonkotsu broth is just a long-simmered stock. There's no inherent "high salt" amount in it.

Ramen noodeles originated in China. ChaShu pork is just a Jap version of the Chinese term Char Siu. And the Japanese don't bother with shark fin because it's not nourishing food and they don't have the Chinese bullshit medicine beliefs.

>> No.11699481 [DELETED]

Not that guy but if we start tracing everything back to its origins then hardly anything will belong to anyone anymore. Ramen as it is eaten in Japan is very different from how it is eaten in China, as is Cha Shu from Char Siu.

Right, but it's still in a pretty common Chinese design bowl, has a core ingredient not used in Japan, and the pork is bright red, and mostly meat, while Chashu is a natural tan pork belly braise. The anime pic is clearly a Chinese dish.

Not really. They don't eat anywhere near as much refined sugar and corn syrup as we do. Both of which are the real culprits behind obesity and heart disease.

The US' entire food supply is heavy in it in some way or other outside of raw ingredients, which are a lot more expensive to the consumer than more convenient, heavily processed stuff. It gets really slimy when you realize "diet" foods replace fats (slow to digest, long release energy) with sugars to compensate for the lack of flavor.

Wrong. Japanese people eat less food. Nearly one thousand calories less than Americans per day. They also eat less meat and more grains. While it is true that they eat less refined sugar and corn syrup, there are far more factors in the development of heart disease. They also eat less meat and more grains (i.e., carbs).
