You have been given a dutch oven made of enameled cast iron.
The heavy lid is useful for keeping moisture inside. That makes it good for braising and baking. Low and slow is what it's best at.
But you can make almost anything else in it that you would in a normal pot. Stews, soups, casseroles, you name it. EXCEPT the enamel cannot take very high heat, so do not use it for deep-frying. And the enamel can get scratched off if you attack it with metal utensils. But with reasonable care it should last you a very long time.

No, you really just have to not overcook it. It really is that simple. Use a thermometer if you don't have enough experience to go by feel yet.

Though I do agree that the oven is a silly method to cook chicken breast. Doing it in a pan is much faster, uses less energy, and makes it easier to get a nice sear on your chicken for flavor.

Fair enough, it just seems like a kind of silly choice of uses. Dutch ovens are best for braises. Choosing one to cook a chicken breast is disadvantageous.

Some tyme
Salt, pepper
Melasses or brown sugar
Vinegar

Saute the onions
Cook chunks of meat seperately in a skillet
Add to the onions
Deglaze the skillet with the beer, add to the pot
Add salt, pepper, tyme and a tbl spoon of the melasses. Add little water to just cover the meat.
Slow cook for at least 3 hrs (4 or 5 is better)
Remove the lid for the last 30 mins to thicken
