My grandmother hates rosemary, or i'd have used some as well in my herb butter.

Ended up doing kerrygold butter with fresh picked thyme and two kinds of fresh sage. All the herbs were picked fresh from my grandmothers herb garden.

Salted the tenderloin, then applied the compound butter, then layered duck bacon on top of that. The compound butter was mainly used due to the duck bacon being fairly lean compared to other bacons.

After that we put it in at 375f for 25 minutes, basted it thoroughly with the juices after the first 25 minutes, then turned the temp down to 325f for 35 minutes, then a final baste and let it sit for 20 minutes.

Overall very satisfied with the outcome. Doneness was just about perfect.

For starters, everything is overcooked. You want to roast your potato and pumpkin, so they should be on a sheet pan in a single layer. Talking seriously, I'm not an awesome chef, but for my taste, that chicken is too white. You try to marinate the chicken the next time. You can use mustard, soy sauce, lemon, persley, thyme, garlic, etc. Put it in the fridge for a few hours at least. Then take it out a few minutes before you start cooking, take the chicken apart and reserve the mustard with all the other stuff, add honey if you want. Put the chicken in the oven and add the mustard little by little.

For what you want to do I would do it this way:
I would first cook the chicken with some oil until it's brown in all the sides, remove it from the pan you are using, cut some onions with garlic, add them to the same oven that you cook the chicken with some more oil and cook it. When the onions are done, put the chicken back and add the stock. You can add some flour when the onions are done and cook it for one or two minutes and then add the chicken and the stock. It will thicken a lot the sauce.

Depends on where you are, in the southern states they are more abundant and here in Victoria our hunting options are pretty good with very little restriction, but my chosen quarry of sambar likes to live in hard terrain and are notoriously elusive. We can't really hunt kangaroo in australia on public land, on private land you can kill them under a destruction permit.
I see way more roos than deer whilst deer hunting, theyre a bigger pest than deer and I would be happy to kill a few for fillets and dog meat. I prefer venison but the meat is still pretty good.

They're great meat though.

Don't get me wrong, I was happy with it and there weren't any complaints. I started it on high heat and then turned it way down to finish, so the graduation would have still been there, but I was going for a touch more rare in the center. That was also from right in the middle of the roast.

Thanks for the tip. I didnt cut into it though. The string snapped and the bones were already almost all the way cut off. Not sure if that is the normal way it comes or maybe it explains why it was on sale. I did throw some seasoning in there. Probably should have re-tied it too. We do tend to have more variety, but that's pretty simple to explain: it's a holiday, and family is being invited over. That's an excuse to cook fancy foods we don't often bother to do, and the large number of people around means there's a big variety of dishes.
