How does /ck/ do their eggs?
For me, its Gordon Ramsay scramble style WITHOUT the fucking chives.

i tried the ramsay thing but man i cant, the texture is shite. i do mine in a pan on medium heat, put my egg in just before the butter turns brown (noisette) so the egg coagulate almost instantly, i just scramble it around a little with a spatula, but not too much, i stop when the eggs are firm but still fluffy, takes about a minute, salt pepper, perfect

Soft scrambled is the way to go. No milk or creme. Salt and pepper three eggs, scramble thoroughly, let sit for 10 minutes or so, add eggs to cold pan and start on medium low, add a pat of butter, stirring once it heats up and is the texture I like. wa la

scrambled eggs: starting on hot vs cold pan
i personally prefer hot pan, but not too hot, with lots of butter

I agree. I love the texture. I have perfected this method so well, that I think the eggs are under-cooked even though they have been on the heat for a good 7 minutes. I use a very liberal amount of unsalted butter constantly folding and working the egg into a rich curd on and off the heat. Of course, season once plated.

Dude, I know that I am taking the bait, but Gordon's eggs are SHIT TIER. They're downright awful. I don't mind egg yolks, and I don't even prefer dried scrambled eggs, but his rendition is just a horseshit borderline act of how you can "artisan-alize" scrambled eggs.
What you need to do is
>throw a nonstick pan on medium heat and let it warm
>scramble however many eggs you'd like
>be careful not to get any shells in them, watch an egg cracking youtube video if you need help
>add a tbsp of water for the steam
>put a pat of butter in your nonstick and move it around the edges
>pour your eggs in once it's all bubbling
>wait a second
>stir slowly
>let it form large curds
>toast whole grain bread
>stir until semi dry with large curds
>plate with toast
I use equal parts dry toast to eggs (anywhere from 3-3 to 8-8 if I have some kind of end your life hangover and am going back to sleep).
Bonus points for cheese and LOTS of fresh ground pepper (I know cheese is pleb, but I can afford it).
That's how you don't meme scrambled eggs.

lol dude. Are you me? I am usually still drunk when I wake up. So I'll still make my eggs the Gordon way with extra butter and fold in some really nice Gruyère. I'll scarf those down, look through my freezer, find something to defrost for later and wake up like 5 hours later.

I started doing it the Ramsay way but cooking them more until I was satisfied they were done. As weeks pass I slowly get closer and closer to exactly what he did in done-ness. Maybe it's an acquired taste. All I know is it takes significantly longer to do eggs starting with a small cold pot and that makes me feel like I'm doing something more professional that just tossing them in the pan with the bacon and letting them soak up grease and get hard scrambled.

Best way to make scrambled eggs. Whisk eggs and some milk together for a minute or two straight til its really frothy and whipped up. put a couple pats of softened butter in it and put it into a hot pan. you get fluffy scrambled eggs in 2 mins and not those flat shit ones.

Throw butter in the pan, let it melt until it sizzles when you splash water on it. Add seasoned diced potatoe(1 whole potatoe), let them cook a bit, then add diced onion and/or peppers. While they're cooking mix 3 eggs with a splash of milk. Once veggies are done add some more butter, then turn down the heat to under medium and add eggs. Eggs almost immediately start to cook then just mix with spatula. Once it's just about firm (takes like 45 seconds to a minute I think I don't time it I go buy look/feel) turn off the heat and mix with spatula a bit more to get that perfect fluffy but firmness.
Then I just grab a giant fucking spoon and eat it as is or make like 3 tortilla wraps. Usually don't even eat lunch I'm so full from it. I also work out for an hour after I wake up so I'm usually hungry as fuck when I cook breakfast.

>> No.11646141

I don't particularly care for scrambled eggs
But I will drop my omelette recipe

Three eggs in a bowl with a tiny bit of salt and white pepper. Beat it with a whisk for at least 5 minutes until the eggs are aerated properly.
In a skillet with butter, pour it in and keep it as flat and uniform as possible, then as soon as the edges begin to seem solid roll it up and let it sit off the heat for 30 seconds
Top with whatever you feel, I do sour cream or tatziki and either onions caramelized with honey or raw red. Both with tomato
