Define "healthy" and "unhealthy" and you'll find that the term is incredibly subjective. Whether something in and of itself or at what amount a food or nutrient can be considered "healthy" depends on a multitude of factors that vary widely from person to person.
The attempt to generalize whether something is healthy or unhealthy by normalizing it against a large sample size of humans is a flawed process, because it relies on conclusions drawn from data/studies that do not have a proper control group. (There are too many uncontrollable variables between virtually any two human's bodies, actions, and environment. This is why Twins are so heavily sought after for studies.)

What you need to realize is that (virtually) not a single valid "health"-related study goes on to claim that any food or nutrient causes a health-related problem. At most they claim it "increases the risk" or "is correlated with (a higher risk)". Correlation does not imply causation.
What you need to do with this realization is to use it as a catalyst to channel your childhood years and start incessantly asking "why?" again. Take everything you read with a grain of salt: Consider the situational circumstances. Practice critical thinking. Try to find all the flaws and understand how much they matter, how they matter, and why they matter.

If you're able to do this, it should only take a short time for you to figure out that lynchpin for a majority of these health-related problems and studies is constant and/or excessive harm and/or stress to the body.
Go a step further and you can figure out that fried food and sugar-loaded food aren't inherently unhealthy; it's simply easier to overload on a single nutrient or total nutrients with them. Barring specific bodily defects, moderation makes them all perfectly safe.

Not all fats are created equal...as some fats are better for you than others.

Trans fats, like vegetable shortening and margarine, deep fried cooking should and MUST be avoided at all cost.

Saturated fats should be used sparingly, but monounsaturated fats found in nuts/nut butters and avocado can improve your blood cholesterol level and decrease you risk of cardiovascular disease.

And last but certainly not least is the "essential" fat of polyunsaturated found in salmon and sardines, rich in omega-3 acids are even better for your heart than monosaturated fats.

The aspect of studying food and nutrition is quite enlightening, however all the studies done today cant really be taken seriously or are flawed due to the length of the study being quite short or who/how it was done, the sample size, health issue factor, environment, crop/animal sources and chems, funding from companies to create bias, etc.
This is the same thing that does with other dietry products/fads like vitamin pills or soylents.
The only thing that can be ruled out for sure is calories, nutritional value amount (maybe) /nutrition sources, exercising, trying to eat natural at best by cooking at home.
Preety much all foods, even the seemingly unhealthy/processed foods ones like burgs, curry, sausages, etc can literally be made from scratch at home with the persons ability to control over everything they want to eat with the amount of spices, salt, fat, herbs, veggies, they want, biggest example is probably potatoes, if you buy them whole you have the ability to make the potato into anything you want, fries, hashbrowns, roast, mash, etc, if you want to eat healthier you can try oven roasting with some oil drizzled and herbs with salt and pepper and controling your intake of calories by weighing it, if youre on cheat day you can make fries or hash. I guess the only bad thing is the time consumed to make these but i personally dont mind since i enjoy cooking. But it does baffle me reading or knowing people willingly dont buy raw ingredients in bulk for cheap and make stuff at home that is cheaper in the long term and tastier and more controllable than just go in and out and eat in fast food joints/get frozen meals.

1. Your body requires food to create energy to live
2. Energy created by food is measured in calories
3. 1 gram of fat provides a little over double the caloric energy as 1 gram of carbs or protein (9 cals from fat, vs 4 from carbs or protein)
4. Excess intake of calories is converted to fatty tissue for storage in the body
5. Excess fatty tissue puts more strain on the bones, organs, and muscles, and makes it generally harder to move and shortens lifespan
