How important is Celery to a miraquox? making one right now and the celery is bad(limp) do i really need to go get more or can i just skip it?

it's mirepoix and limp celery is fine as long as it isn't rotten, the firmness has no bearing on the flavor which is all you're using anyway

I don't like cooked celery so I use celery salt or celery seed. Works perfectly.

If it bothers you, just leave it whole so you can pull it out later

Celery in mirepoix is a lot like bay leaves imo- you don't necessarily notice it a lot but it's really obvious that something is missing if it's not there. Limp is fine, you're cooking it anyway and celery doesn't hold up well to cooking, texture-wise. As long as it still tastes fine it won't make much of a difference.

can't skip. celery adds a noticable peppery bite to whatever you're cooking. you will notice it missing. especially in stews.

If you leave out the celery in a mirepoix, it's not a fucking mirepoix. You're just frying carrots and onions then.

If I wanted to make a ham sandwich, but I'm out of ham, I don't substitute the ham for something else and still call it a ham sandwich.

Get out of kitchens, you retards.

Mirepoix is really just vegetables not specifically carrots, onuons, and celery that's just the French style of stock making everyone learns. The creole and Hatians omit the carrots and use green peppers it's the same thing and serves the same purpose as mirepoix for gumbo they do differentiate by calling it trinity sometimes though. As for OP's question it doesn't matter what the veggies so he can leave the celery out if he wants it will still come out fine but firmness also doesn't matter for jack shit in using mirepoix so he might as well toss it in since it's going to add flavor and be strained out anyway no matter how flaccid it is and he can get some use out of it since he is just going to toss it anyway

The bitterness of celery counters the sweetness of the onion and carrot.
