My go to is potato leak. The base is so simple and it's easy to make tasty variations.
1 L chicken stock

For soups I've only followed a handful of recipes and now understand how they work so I just make something with what I have. Everytime it comes out delicious, and everytime it comes out different.

I do love me some lentils though, those small red ones. If cooked long enough they sort of dissolve into the soup and really give it a nice thick consistency, while adding that delicious lentil flavor throughout the soup. Pairs well if you are using cumin, smoked paprika, and other such spices to flavor the soup.

I've been making a lot of potato leek soup. Some stuff I've been experimenting with:

Caldo Verde. The best soup.

>a bunch of kale thinly sliced
>small potatoes about 700 grams quartered
>linguica chopped in pieces about the length of the top half of your thumb
>half a link of dry chourico finely sliced
Put the kale, potatoes, and linguica in a big pot. Cover fully with stock dash of salt. Bring to a boil and simmer until kale is tender. Add thinly chourico when finished. Optional: crack some eggs on top and cover to serve poached eggs on top.

I made a potato and sausage soup last week that turned out good enough I made it again this week.
Going off of memory here

1/2 tsp oregano
1/2 tsp red pepper flakes
1/2 tsp dried basil
5 cups chicken stock
1 lb red potatoes cubed
1 large yellow onion diced
4-5 cloves of garlic minced
1/4 cup or so of heavy cream
Bag of baby spinach
Salt and pepper

Remove casing from sausage, brown in pan. Remove meat, drain grease (saving a little bit for onions). Cook onions until translucent. Add garlic and spices. Cook only for a minute or two. Add stock and meat. Bring to boil. Add potatoes. Cook about ten minutes until they are tender. Turn heat down. Add as much spinach as you want, stirring until it's completely wilted. Last step is add the cream, stir until completely mixed then serve. Good with crusty bread.

Cream mushroom soup
1 lb of any kind of mushrooms (or multiple kinds)
1 onion
10 garlic cloves
1/4-1/2 cup white wine or Madeira or sherry
Blend until smooth
Reduce slowly until mixture becomes thick paste
Add 1 qt cream and cook until thicker
Add salt and pepper and some form of acid, creme fraiche or lemon juice or Apple cider vin or sherry vin

Serve as is or with crackers or bake into kielbasa, sauerkraut and dumplings
