Making bad reviews (or any reviews really) is definitely not rational behavior at all. But a lot of it is because they can't understand how businesses aren't individual human beings. You see that often with customers of companies in general calling in and then getting super-upset at the agent answering the phone because that agent doesn't magically know what "they" did to annoy the customer, "they" being someone else and/or some process at that company which has nothing to do with that agent.
Anyway, this bizarre inability to understand the difference between individuals and organizations leads people to think acting out against an organization with a bad review is a way to get back at the organization for wronging them. If anyone suffers from a bad review though it probably won't be the person who did something that customer didn't like while at the restaurant the review is for. And it's not likely they're going to change the behavior of the restaurant in general by complaining about some one-off thing that upset them.
Also the customers who feel the need make a huge emphasis on how the restaurant / company they're complaining about has "lost their business" are pretty embarrassing to hear from. I can't imagine having that much of a distorted ego that you think your $5 worth of business is valuable or you're making people at the company feel sad by breaking the news to them that they're not getting any more dollars from you.

People are more likely to leave a review if they have very strong feelings. But particularly negative ones because they need to vent. Nobody has an okay experiance and says "geez I need to share how okay my experiance was." But anger is also largely irrational and lets face it a restaurant is not really in a position to piss you off THAT much that it is jusitifed. they cant fuck your wife, only fuck up your food. So mildly annoyed people calm down before they get to yelp. Thus leaving the irrationally angry, that likely have other problems causing this. This combined with the fact that most people are inherriantly stupid leaves your answer. Also why the rule of thumb is to throw away all 1 star and 5 star reviews and focus most heavily on the three star ones.

I hate how some people want to pay as little as possible for a service quality only expected when it should be several times more expensive. I see this a ton when booking hotels. I'm usually not that concerned with the quality of the hotel overall so I go for nearly cheapest ones and they don't have the fanciest breakfast ever, not the most spotless floors, not the best lighting setup, not the highest educated or chirpiest personnel, no elevators, not all extra features and services. Most of this is even explained when booking the hotel, with pictures of the breakfast and rooms. Yet I still see reviews giving garbage scores because "the eggs were slightly overboiled", "they didn't have enough fresh fruit of x varieties", "there was noise from the street but no AC so we couldnt close the windows!" or "I found dust on top of the wardrobe!". I can't fucking believe how dis-illusional these people are when they scrape the bottom of the barrel for the cheapest thing possible and still complain about the smallest little things while setting inappropriately low scores for the discomfort caused by it. I've stayed at several hotels for a week and never had real issues that couldn't be resolved by talking with the reception.

Well I have, there's two things at work here.

First is that sense of entitlement you describe - people just don't have realistic expectations. Granted sometimes - often - this is because they're travelers, so it's for granted they don't know the area or what they're getting into. Example: I live in the south. We got bugs. The hotel wages a daily fucking war exterminating every living fucking thing in a 20 foot radius around the hotel, but sometimes a few ants, or god forbid a palmetto bug gets by. Whats a palmetto bug? Basically it's a flying variety of roach. Fuckers will come through the vents, or up the plumbing. Nothing we can really do. But this is the south - the reason they're here is because you go outside and we're surrounded by fucking tree's and nature and shit, unless you're in the tiny ass strip of downtown. Now in someplace like NY, you got a bigass cockroach it's cause the place is dirty and has an infestation, I get it. In the South? It's because this is where they fucking live and you just got unlucky, ok? But you can't explain this to people. You can't tell them there was a 1 in 100 lottery and every day there's a winner and today they won a thumb sized water beetle scuttling across their wall.

They also don't understand how humidity works. Our air is so fucking thick some days you need a fucking snorkel to take a walk. So these dumb fucking yankee's get in their room and crank their AC unit down to 62 degrees and that tiny little window unit is just fucking choking to death - incidentally if the hotel has less than 200 rooms it doesn't have central air, just window/room units - and it literally fucking freezes over solid inside while these bitch cunts complain about it not getting cold enough. Goddamn man, if you get your room under 75 degrees you have WON, you aren't going any further.

Second thing at work is they just want free shit, or that magical service recovery rate reduction/elimination. This is especially prevalent at corp. chains, like Hilton or Marriott. People know there are standards and rules, standards and rules set by someone in an office 7 states away that cannot be conceivably followed by every location - when they even bother trying since 2/3rds of all hotels are franchises and those aren't even Hilton employee's you're bitching at they work for some rinky dink LLC wearing Hiltons skin like a fucking coat - and they do everything they can to scam you. I think they're so upset that they want to believe they can hurt someone else back so they feel less like they're the ones losing out in the exchange. And also there's some attempted manipulative angle there too where you're trying to convince the service provider they have an incentive to do what the customer wants and a disincentive not to. I saw someone do something like this on a Linux forum many years ago where he kept on begging for technical support on an open source system that nobody had any incentive to provide to him. He eventually switched from begging for help to calling everyone stupid for throwing away the money they'd be making if only they turned it into proprietary software. Of course that sort of argument makes no sense, but you could see how in his mind he just really wanted people on the internet to solve his problems and his recognition they weren't going to help because it wasn't a product anyone sold him in the first place made him go for a line of insults that implied it was stupid to not do what he wanted them to do and smart to start doing what he wanted them to do.

Not that I ever give reviews of any sort, but if that happened to me I'd find it pretty obnoxious. I get food from this chinese restaurant through uber eats sometimes and once the manager called me and said I'd save money by using their own online delivery site instead of uber eats. I tried what the manager told me once and it was terrible. I went back to uber eats after because I can actually specify how to meet me without the driver getting confused by the different locations at my apartment complex and the gates they might or might not try to get past by following in another resident, and also because I can see where the driver is through the GPS map and don't have to wait for some random phone call after they've already arrived. It stresses me out like crazy not knowing when the phone call's going to happen and feeling like I can't relax or use the bathroom for fear of not being ready at a moment's notice to interact with their own retarded delivery driver.
Anyway tl;dr fuck restaurant staff who can't mind their own business.
PS: That's also pretty unethical that they took it upon themselves to do that with your order. That's business they might not be getting if services like "menu log" didn't exist to attract an order in the first place and they're effectively stealing by taking the order and then lying about it being cancelled.

I'd understand this about say other businesses like certain big box stores or cell phone companies, but you're fairly incorrect on restaurants. People usually very specifically recount the situations that were bad or when a server / waitstaff had done something to upset them. It's pretty easy infact to fix the various issues from negative reviews. That said, I use Google reviews or Facebook review comments for this. Yelp is awful and I've never humored the lot of them. If they're rude to me they get their money back and sent home without food.

People complain on yelp because the industrial revolution and its consequences have been a disaster for the human race.
Anyone who complains is doing so because they have had to put in zero effort to acquire the food that they have received from the server. The process of putting forth effort to acquire food is one of the most important things to human happiness, but the modern technological society has removed this. Therefore people must fill time with surrogate activities that can require effort and provide the individual with autonomy. These surrogate activities can include sports, dancing or writing reviews on Yelp complaining that your creme brulee was too cold. In a primitive society nobody ever complained about the temperature of food because the people were satisfied and happy with the effort that went into acquiring it, and didn't feel the need to introduce a surrogate to try and replace the effort they had already expended.

The only way for people to feel satisfied and happy without uploading reviews to Yelp is to rebel against industrial society. It is not enough to try to reform society from within so that all restaurants serve food at perfect temperatures all the time. Because you would still be angry and frustrated with the lack of power and autonomy given to one by the industrial society and instead you would need to write Yelp reviews complaining about the taste of the food. It would be an endless cycle until technological society is overthrown and a return to a more primitive wild state is completed. First time me europoor in Toronto. Went into cool and modern italien restaurant. Open kitchen, dark wooden furniture, artificially designed old metal things and pots on the wall etc. Tried spaghetti with meat balls and the bolognese sauce was really bland or unseasoned. Put some salt in it but it didnt do the trick, they probably used cheap canned tomatoes and no tomatoe paste, tasted also sour.

He offered us to get more bolognese sauce from the kitchen and we accepted it, didnt think it was that big of a deal.
Unfortunately the sauce that came was the same (duuh because bolognese sauce needs +2h of cooking), so yea. bad cook.
As soon as we were done the manager came and told us that we should tell earlier if the meal is bad so they can exchange it for something else.
This was a new dining experience to me, especially since it came from a ~28 year old fucking feminist manager slut with a headset on her fucking head.
2/3 of the time in the restaurant was eating undelicious food and the other 1/3 of the time was spent talking to the staff.
