What kind of burgers do you make? I just made two late night burgers. Burger 1, is a setup close to Whopper setup but not quite, it has Swiss cheese, raw onions, tomatoes, and slathered with some ketchup and mayo. Burger 2 has pepperjack cheese, topped with onion rings, and with a layer of Open Pit BBQ sauce. Which do you thing would be better?

When I make them at home, I normally do just a 1/3 lb patty on a toasted bun with two slices of cheese and maybe ketchup. I do enjoy burgz with more elaborate toppings, but there’s something nice about a freshly made simple burger that no restaurant gets right.

Raw onions are the single most perfect pairing for a burger, or any sandwich really. Never have one without them. Like pickle or lettuce, it adds crunch and texture, but unlike lettuce isn't just "crunchy water" and unlike pickles doesn't overpower the meat with strong flavored juices. Raw onions ad the right amount of texture as well as complimentary flavor.
