What are some recipes for pumpkins? I recently came into a surplus of large pumpkins and I want to know what to do with them besides making pumpkin pie.

An old family fried used to make pickled pumpkin, sweet and lighty spiced like a pie.
Pumpkin soup is nice in the winter.
Roast them; scoop out the flesh; freeze it for later or hit it with some butter, salt, and pepper for your starch dish.
Make real pumpkin beer out of them.

This year I grew a shitload of jack-be-little mini pumpkins. 30 minutes in the oven at 350* after scooping out the guts and throwing a spoonfull of brown sugar, butter and some cinnamon inside and replacing the lid. Shit's delicious, but I'm not sure how you'd adapt it to larger pumpkins. Maybe cook them, scoop the meat out, mash and mix with brown sugar/butter to make a filling for something or a dessert?
