Is this the cat thread?
I'm having a chicken with some rice.
I was thinking I'd go down to the beach and get a rock and see if I could get a more nicely cooked bird by heating the rock and putting it inside the cavity, and then the whole thing into the oven.
But the weather sucks and it's kind of a long walk, so we're just simmering it.

I use some of the water I used to cook the noodles with, pour a little bit into a pan then add cheese and pepper to make it paste like but it never gets as creamy as I'd want it to be

Sounds fair, but rushed.
Get one step ahead of the sauce:
1 grate the pecorino in a bowl, add 10% parmigiano already grated
2 get the water going, throw the pasta in, use a long cooking pasta for comfort
3 start adding water bit by bit. every time you add the hot water, you mix. hope you got some bitchin arms, you are gonna get tired
if you see its to dense, add some more. added too much ? throw some parmigiano in to compensate. throw the black pepper in during this stage. mix mix mix
4 DO NOT throw the sauce mix with the pasta in the hot pot/pan, its gonna disintegrate, just put pasta in a plate and then add the sauce. it needs to be fast before it gets cold

grandma's trick to thicken any sauce:
take a small piece of butter and a table spoon of flour
know knead the flour into the butter until it's evenly absorbed
put that "dough" into your sauce and stir until it's dissolved
repeat if sauce is still too watery

so it's still a valid attempt to "rescue" your sauce if you don't succeed initially
