When you heat green coffee beans to such hight temperatures you not only kill all the 'living' elements in coffee beans but you are turning those
coffee beans into a poisonous cancer causing lumps of coals.
Plenty of scientific data stating that all charred burnt foods like bread, meat, veggies, coffee are carcinogenic.
Add to it massive amounts of toxic chemicals used on coffee plantations that are in the coffee beans no matter the level of roasting.

The French isn't directly derived from Latin because as you say, the phrase didn't exist in Latin because Romans never saw coffee.
But since the phrase exists in Italian, we can reverse engineer a latin expression out of it and then derive a French express from that. Which I think is the theory.
I'm really not making a strong argument about this though, I'm just explaining what is said about how we ended up with this word.
The word is in common usage though, it's very wide-spread.
If you have strong opinions about this and some linguistic credentials to support this then I'm not going to debate you, I'm really not qualified and I don't even care which word is in use. I use the Italian because that's what I grew up with and anyway, I make Italian coffee and all my beans say espresso.

anon I have Bialetti Stainless Steel model (picture related) and standard aluminum model.
When I was drinking coffee I only used the SS.
What I like about my SS model is the wide bottom 4-3/4", so it covers more of the stove top elements. The aluminum model has 3-3/4" bottom.
Both of course work OK regardless how wide the bottom is, I just like using SS over the aluminum.
SS is not reacting with acid forming coffee as aluminum does. in my opinion
I don't know about other models you listed, read some reviews of course on them, but make sure that they are made from high quality stainless steel,
not some thin cheap quality shit. Mine is Made in Italy from 18/10 Stainless Steel.
Also make sure that the screen is also SS, but if the body is SS so the filter should be also.

Be smart and don't use dark roast coffee beans, medium or lower. But medium is pretty safe since coffee beans were not heated to such high temp as in dark roast.

I work in the Ag industry. There are regulations and requirements but it's 99% on the honor system.
Organic producers outside the US are supposed to adhere to the same standards and need to be certified by some 3rd party institution, but they at most might ask for some records and never do assays or field visits. It's not a scam per se, some growers are honest, most are mostly honest, but when some bug or disease threatens your livelihood and the only thing that can save it is some pesticide, you can imagine what choice is made.

All that said I am not aware of coffee being a highly treated crop. There is a fungus wiping out some vatiety of coffee but that's not even feasible to treat for with fungicides, usually just have to replant with a non-susceptible cultivar. I am not familiar with any other insects or diease of coffee but my experience in that field is limited to visiting a dozen or so plantations; I'm not an expert.
