Kind of defeats the purpose of having steel cut, but you can also just blend the oats into flour and make pancakes or something. Oat flour pancakes have a nice texture.

I make it with 1/2 or 1/3 milk to water (generally whole). Steel is already pretty thick, but the lipids really smooth it out and make it savory. I generally top with some honey or maple syrup, but I need every calorie I can get a hold of.

With the milk sugar, you might try diced apples and cinnamon.

I take four eggs and a handful of shredded cheese, and fry it up. Then I divide it up into two halves and throw it on some soft flour shells.

Onions isn't a bad idea but not something you wanna mix with a sweet oatmeal. Instead, onions go with veggie and savoury oats.

savoury goes with both any kind of oatmeal which is nice and makes sweet oatmeal better for you.

Whenever I make oatmeal I generally make either a fruity or hearty oatmeal.

For hearty you roast some veggies and meat in a pan then add water. Once it starts boiling stir in the oats and once the oats start to thicken. Throw in some egg and cheese to make it creamy. Milk and butter if you want.

For fruity it honestly depends on what you have on hand and like. It less about the fruit and more about the spices. In general cinnamon, ginger, nutmeg, cloves, vanilla, brown sugar, maple syrup, and honey are all perfectly viable. If you wanna make it creamy throw in some egg and milk if you want. Sometimes people like to use nuts too but personally, I'm not a big fan of nuts. Iron cut oats already have enough crunch and nutty flavour to them for me. I did experiment with it though. I have yet to try nut shavings though and I know some people love adding nuts.

I thought you were eating something like quaker quick 1 minute oats and were planning on switching to steel cut. Quick oats have a different flavor and taste a bit sweeter.

One thing I've learnt is not to focus on a single ingredient, but create recipes that fit your macros. E.g. I eat rice, and bread because it goes well in certain recipes even though there are higher protein grains.

I prefer instant oatmeal, and I don't like it too thick. It should be able to fall off of my spoon if I turn it over. I don't know why people eat concrete oats. A whole fresh peach has about 15 grams of carbs. 15 grams isn't that much to make space for if you love peaches and they are healthier than say candy, sugar, or syrup and come with fiber and water and vitamins and minerals. Steel cut by its nature will be more nutty than whole rolled. If you want a fruity oatmeal steel cut isn't the way to go.
When I was younger I used to to banana and honey all the time. Like every single breakfast.
Now if I make oatmeal it's usually just some cinnamon and a dollop of molasses.
