Rudy’s BBQ Rub

Ingredients:

1 pound salt
4 ounces chili powder
3 ounces black pepper, coarsely ground
3 ounces black pepper, finely ground
2 ounces hot paprika
2 ounces garlic powder

Directions:

Mix all ingredients together and place in an airtight container. Rub on beef, pork, chicken, lamb (anything) generously and marinate 1 to 5 days, refrigerated, before cooking.

anything (tex)mex is a little different every time, but ideally:
- ancho, chipotle, and guajillo
- cumin
- homegrown oregano (it came with the house... it's potent and invasive so I cook with a lot of it)
- garlic, onion
- something a little "out" like ground coriander seed, cocoa, achiote, cinnamon, ginger, clove... it needs something that isn't just straight up taco seasoning.
- salt and pepper

To make it Indian, up the cinnamon, clove and ginger, to make it more eastern, hit it with a whack of fennel and nutmeg.
