King Oscar brisling are a fantastic intro brand. Make sure to get them packed in at least olive oil if not more... never just water. IMO the easiest sardine to get into are the ones packed in mustard on a cracker.

Sardines with black olives and cherry tomatoes

12 cherry tomatoes
12 black olives (your choice, pits or not)
2 cloves of garlic
fresh green onion for garnish
1/2 tbs oregano
1/2 tbs red pepper flakes
salt and pepper to taste
100 g angel hair pasta
sardines of your choice

Put a pot of water on the stove, add enough salt to make it taste like the ocean, and crank it up to a boil.

Prep your sardines as needed, and use a brand that has some nice big fleshy fish so you can cut them into bite size pieces.

Heat up a skillet, add a liberal amount of olive oil, as you're going to be browning with it and then using it to coat your pasta. Leave the cloves of garlic whole, but take off the skins, and toss them into the oil to infuse it with garlic flavor, check and turn them once they brown so as not to burn. Add cherry tomatoes and cook until you get some good color on the underside, then turn them over to do the other side and add the black olives. We want 2 sides of the tomatoes with some nice color and the olives tender.

Next add your pasta to the water and cook it until it's just about done, then transfer to the skillet and add a little bit of the pasta water to help finish off the noodles in the pan, and to create a sauce from the pasta water and flavored oil. Once the noodles are just about done, add the oregano, red pepper flakes, and your chopped sardines, then toss them and coat with your sauce and heat them up in the pan. Check for seasoning, then plate and garnish with fresh chopped green onion.

Done.

Those 15oz oval cans are great in terms of price per weight. I use it for a sardine tomato soup, add potatoes, carrots, celery, onion, garlic, broccoli, spinach, and season to taste. I sometimes add a rice cooker made mix (rice, beans, oats, and nuts) for a big meal. Easy and cheap way to make a decent and nutritious meal that keeps well. I save the fancy 4oz. cans for a stand alone snack.
