I personally mostly take issue with it because every "meal prepper" I know falls into one of two buckets:

Did a chicken to practice for Thanksgiving. Followed BA's recipe that calls for a dry brine, butter over/under skin, and a glaze made from butter, red wine vinegar, Worcestershire, honey, rosemary, and garlic.

This is a little lighter than it turned out as I have an old ass analog meat thermometer that's unreliable so it needed 30 more minutes after this.

Sure, but I'm not going to really consider it "prepping." It doesn't really need a label. Two days is about the point where I start to think you're sacrificing quality for some silly sense of accomplishment or savings instead of actual convenience.

It also matters if you're eating that for every meal. If you told me you put 3 days of stew in a pot, and all you ate for 3 meals a day for three meals was stew, I'd say you either have shit taste, or are poor. If you had three lunches of stew, I'd say "wow, that sounds boring but maybe there was a special and you needed to use the entire roast."

I make chili's, soups and stews and then freeze them in vacuum sealed bags, on a typical prep day I will make 4 large batches of different flavors of soups, chili's and stews, then I freeze them in labeled and dated vacuum sealed bags. Then it's as simple as grabbing a bag of whatever I feel like having for lunch at work on that day while headed out the door. Some of these stews and chili's take 4+ hours to cook, I'm not doing that every day for lunch and they taste a hell of a lot better than the taco bell, Subway and McDonald's my coworkers all seem to live off of.

my work has a regular fridge with a freezer, so I just keep them in there, I usually just keep 2-3 at work in case I forget to bring one.

Any vacuum sealer will work, the trick to vacuum freezing liquids is to freeze them in another container first, like a tupperware container, then take them out of the tupperware when they are solid and seal them in the bag.

Hi! OP here. Sad to see this thread about cooking got derailed so quick. Not sure how anyone can get so upset about cooking on a cooking board, but not surprised either.
I made this because it's cheap, about €1 per serving. I have to go into the city for school, and having a meal with me everyday means I don't waste 2 or 3 euros on some convenience food.
Tastes great too, and well rounded nutrient-wise, but I will usually add a side of fresh greens to really round it out.
It's more efficient for me. I can be lazy sometimes and forget to cook all my chicken, so getting it all done in one spot prevents any going bad. I don't mind the big load, since I like cooking. It acts as a way for me to clear my head.
It can be a little monotonous, but I switch it up every week, so it's never that big a of deal, for me at least. If I had problems eating a similar meal for 5 days then it would be pretty easy to just season the chicken differently to add variation. Maybe you can try this!

Pan fried some chicken strips I left marinating overnight in an onion/garlic/lime marinade. Seared some skinless chicken thighs then finished off in the over in a reduction of white wine, chicken broth, onions, and peppers. Made a veggie stir-fry out of the frozen stuff my gf had in her freezer. Tasty but mushy. Should be good for the week.
