Just bought a slow cooker and I'm looking for an easy but delicious recipe for stew.
I tried to make one, somehow failed one of the simplest dishes ever.

I'll admit, I've never made a stew, but I feel like it's the kind of dish the slow cooker was invented for. I'm sure there's some suggestions OP could get about making a stew in a slow cooker rather than "you need to cook for two hours under supervision to make a simple dish or you're scum"

3 pound chuck roast
1 teaspoon Kosher salt
1/2 teaspoon coarse ground black pepper
1 yellow onion chopped
4 carrots cut into 2 inch chunks
4 Yukon potatoes chopped
4 cups beef broth
1/4 cup tomato paste
1 bay leaf
1 teaspoon thyme
4 cloves garlic minced
1 tablespoon Worcestershire sauce
2 tablespoons butter unsalted
2 tablespoons flour

1.Season the beef with half the salt and all the pepper.
2.Add to the skillet and brown on each side
3.Remove the beef from the pan and add in the onions.
4.Cook the onions for 3 minutes, stir then cook another 3 minutes.
5.Into the slow cooker add the onions, carrots, potatoes, broth, second half of the salt, tomato paste, bay leaf, thyme, garlic and Worcestershire sauce.
6.Cut the beef into 2-3 inch chunks and add it to the slow cooker.
7.Stir all the ingredients until well mixed and cook on low for 7 hours.
8.In a small bowl mix the butter and flour and add it to the slow cooker and stir.
9.Cook an additional hour or until thickened with lid off

I'm also going to point out that soup is better in a slow cooker than stew. Stew needs to be thickened and that can be a pain to do in a slow cooker. That said I love slow cookers for taco meats.

Yeah, I noticed that...
End result of the stew I tried to make was a watery mess. I added too much liquid too soon and tried to compensate with corn starch.
It just wound up tasting like laundry water and I threw it out.
Worst thing I've ever made in my adult life...

I make stews a bit but I have no recipes.
I'll just boil some vegetables in a stock beef/chicken/vegetable/fish depending on what meat I'm using, starting with the longest cooking ones (potato, carrots etc).
Brown the meat in a pan with some onion and spices (normally just garlic and butter, maybe ginger). Take off the heat and add more spices (Chilli cinnamon rosemary etc) stir up get a good coating and let sit 5mins.
Add to the vegetables and broth, simmer down a bit.
Maybe add milk/cream/butter/cheese depending on the stew otherwise maybe a little cornflour dissolved in cold water.
Settle down to simmer with lid on and go play a computer game for a while
Check on pot after a half hour to taste and adjust, add S&P
Play another game
Serve with garnish(coriander, parsley, sour cream, cheese) and bread and butter

Some general improvements for stew:

>Cut the meat first and sear in batches. More surface area means more browning which is more flavor.

>Dig a well in the middle and cook the tomato paste out a little. Sometimes there is a bitter/metallic taste.

>Melt the butter and add the flour in a medium pan. You need to cook the roux until you cant smell (or taste) the flour

>Reminder that stew almost always tastes betted the next day - the flavor intensifies and matures greatly

Ive also really never used a slow cooker... Regular dutch oven is my go to with pressure cooker (with minor adjustments to recipe) as backup

This isn't true IMO. The impact of browning vs not browning is insignificant in comparison to the flavor from the broth base, seasoning, and other additions like wine/beer/whatever. Browning will however result in less tender meat in a stew or pot roast. My preference nowadays is to not brown.

I googled my opinion to check if it was right, but completely blanked what I just read, so I may be wrong, but I thought that slow cookers were better insulated cos of the air gap between the inner casing and outer, and more energy efficient cos internal heating element? Admittedly tho you'd either gotta waste a pan browning and deglaze, or fucking try browning in a slow cooker for the banter.
