I have just gotten into the world of tea and it's becoming a hobby for me. Can /ck/ recommend any resources for me on the subject? I want to read all about tea. Proper technique on how to infuse it, most famous flavors and their health benefits, tea etiquette. Everything!

gaiwan brewing emphasises a higher leaf to water ratio but much much shorter steep times. You get more steeps and more variation in differences between steeps. But not all teas are suited for nor meant for gaiwan

I see. Probably won't use that method because I live in Brazil. High quality tea is extremely expensive here, about twice as expensive as other countries from what I see in the Internet prices, and I'm just a university student, gonna rely on western brewing to make good use of less leaves

I have one dumb question about temperature, how does one know the water is at 80C? I can only tell the water's temperature when it boils, at which point I know it's at 100C. Do people just wait some seconds after it boils before pouring? What difference does it make if I pour it after it just boiled?

Get a brewing basket. This way you can put the leaves directly in the cup and they're easy to remove. Since you mention price, keep in mind tea leaves of good quality can be reused. As for water temperature you can buy a kettle or water boiler with temperate cobtrol. A thermometer also works fine, just mix tap water with boiled water until you get the desired temperature. Personally, I'm a lazy fuck so I just estimate the ratio of tap water to boiled water and it works.

I remember reading somewhere that most Taiwanese teas, particularly for overseas sale, are 'cut' with oolong from Thailand anyway. What I don't remember is why that's a bad thing, since they just seem to claim the taste is different (Obviously, since the soil is different the tea will be too) but that doesn't necessarily need to be a bad thing. Wasn't there some kind of tea scandal in Taiwan sort of recently? Did it have any more meat to it other than "oh no it was Chinese"?

Bloody hell, it smells and tastes like ice cream, especially if I put some milk. I'm buying a bulk of that.
Still wondering how that can be possible. I'm guessing they put an artificial smell and flavor into it. Which makes me sort of sad since tea is supposed to be healthy, right?

that chart is too conservative imo, even for gongfu brewing. Personally I do 20-30 seconds 1st steep unless its greens, because those get bitter really fast.

but to answer your question...gaiwans for personal use are really small. You have a lot more tea to water, and you sip out of smaller cups to appreciate the taste. Pic is about the size you'd use for personal consumption (100-150ml)

No I was actually more curious on the eastern brewing so thank you. The Western Brewing has the first step for most teas to be between 2 and 3 minutes, which while still more conservative than I'm used to, is in the same ballpark. It was the Eastern styles that threw me for a loop with their 5 second times, so your post answered the question perfectly. Thanks anon
