I have no problem with it as long as it's not sold as a different cut from what it actually is. If I buy a ribeye steak I obviously want a very specific single cut of meat, not some cheap stew meat they glued together. And even if they make it look like a steak it's not going to cook like one.

I've used that stuff to keep roulades together, it's not nearly as good a deal as the webm makes it look like the medallion they make would fall apart in the oil probably 50% of the time, I've never seen or heard of mooglue being used to take cheap cuts and make them into medallions in any restaurant or establishment, I think it would be cost prohibitive for the amount you would need to substantially make scraps into a log like they did and even then you can tell where the seams are it doesn't look the same as a normal filet.
