Hey /ck/.
So i tried grinding venison in my blender. It didnt grind out well, so I added a little water, and it just became pink mush. I kept as much as I could of it, and tried to dry out moisture using a paper towel. I then decided to just cut the rest of the meat as small as I could with a knife and added this to the mush.
However, when I tried to use a jerky gun on the mixture, the rod just pushed past the meat, and not let it come out the tube. Im assuming because it was too mushy.

Is there any way to salvage this and make my jerky?

you mixed this with the overly processed stuff right? add more of the course cut is all I can think. is your "gun" got good seal? seems not. flatten it out by hand with a bit of oil/fat to keep from sticking

Yeah, the gun might be a problem too. My grandmother gave me the gun/kit, and it was already opened. There was a metal circular plate that goes on the rod in the gun tube, which I assume pushes the meat out when you pull the trigger. There is nothing to keep the metal circular plate onto the rod, so I found a nut that fit the rod, and now its keep in th plate on tight.
Does that make sense? My phone battery is too low to take a pic now.

yeah, I never used a gun but if you can't get it to work. just lube your hands and flatten your meat on a piece of foil/parchment/or plastic wrap. then cut it and try to get it on your racks
I've never made jerky though
but before you do smash it meat side first on mods face, fuck I can't hardly see these things with one EYE closed

How do I into jerky? Not something you really see on this side of the pond. Tried some packaged shit from an imports store and it was fucking horrendous and I would like to try some real stuff. We're more of a chouriço country.

It's gonna be shit no matter what, now. You just made shit sausage filling. Add some pork fat and spices (black pepper and allspice is gr8 with venison) and make sausage.

Jerky is thin strips of meat, salted and spiced and left to dry.

Marinades will vary pretty wildly, but the technique with the fan is a good one. This time of year is (usually) pretty dry and cold which is good for jerking.

How about you just slice your meat into strips instead of using the jerky gun? I've never made jerky with ground meat but doing it with slices works just fine and saves time I would imagine

I would think that if you put a ground meat strip into a marinade it would just absorb too much and fall apart. I dont see any advantage to ground meat jerky, if you dont like tearing with every bite then cut across the grain, if you like ripping and chewing cut with the grain
