The reason you secure the limbs is so that they cook evenly. If they just stick out then they'll overcook and burn long before the main part of the body is cooked. This is basic shit if you've ever spit-roasted a pig, lamb, goat, whatever.

Also, people tend to overlook this: you need to find a way to secure the body to the spit, otherwise the spit rotates but the body does not. Securing limbs to the spit is one way to achieve this.

They say human taste like pork. So I would imagine if you test it like any other pork dish it should be ok. Also I imagine depending on how fit the person is you may want the calves as your cut. That way it will be be flaky after a pressure cook.

Arm

Chop off most of the forearm and cut up the hand. Make sure the hand is clean, it might even be a good idea to discard the fingertips. Cut the rest of the forearm into rough pieces and brown it a little. Boil it into a delicious broth with some onions and celery, the kind of broth that turns gelatinous when refrigerated. Maybe add a sprig of thyme towards the end.

Brown the rest of the meat from the upper arm, hopefully you've got some nice deltoid to work with but the bicep and tricep will be delicious too with ample cooking time. Use your hand broth and make a stew with your meaty chunks. Add carrots and potatoes, celery too, maybe other root vegetables if you feel inspired. Crushed tomatoes might be a nice addition too for both acidity and a touch of sweetness, be sure to take out the seeds. Braise until tender, season towards the end. Enjoy with a nice crusty bread spread with a good European style butter and a glass of your favorite red wine.
