I don't really understand why, but it seems to mostly be a boomer thing. In my experience younger people don't really care, but it's the older folks who will freak out about a bit of pink in meats. It's likely either some kind of cultural thing from a bygone era, or food quality standards used to be much worse and unsafe unless cooked to hell

You're on the right track. Boomers were raised by parents who were raised by people born in the late 1800's when pork was very likely to be contaminated with trichnosis and slaughterhouses were festering sewers (think "The Jungle") so they grew up eatjng well done and passed that on to their boomer offspring who didn't have easy access to information that contradicted it like subsequent generations.
