American BBQ is the best BBQ on Earth, so long as you've never left the US. Really their over dependence on sweet, sticky sauces or vinegary dry rubs dampens the whole experience. Countries that make better BBQ in no particular order:

>Argentina
>Brazil
>Cuba (for pork)
>Cantonese (for duck and pork)

I would rate American BBQ same as Korean. Very good but they do not let the meat speak for itself. I've traveled all throughout Texas, the South and a few parts of the Midwest. The best American BBQ is in Texas. They tend to put sauces on the side. And their meat stands on it's ow which I like. They are probably top 3 worldwide in BBQ. Worst BBQ state was Tennessee. Not that they are the worst in the US (probably Alaska or something)

It really depends on who's making it. Barbecue isn't a flavor or an ingredient, it's a whole method of preparing food. Most barbecue you'll eat is generally an insult to the craft, but there does exist 10/10 barbecue within the US, and it's not too hard to find.

I made these before. wasn't that great simply because of the amount of fat in pork belly is too much when it's in cubes like this. pork belly is much better for bacon, when it can be a small/thin strip that's cooked down. chewing through huge chunks of fat is kinda gross.

The sugar in alot of bbq is mainly for brining and has nothing to do with making anything sweet. The only time you're adding a significant amount of sugar at all is store bought bbq sauce. Many of us who make our own foods and sauce aren't putting in the kind of sugar you're thinking.

New thread rule: if you think American BBQ is by default sweet, or you've only had store bought prepared items or food chains, or you tried "American BBQ" within Europe or Asia, then you need not comment. Overseas they sell American BBQ as oversweetened glazed meats because that's what most Europeans and Asians expect at this point. Non American cooking shows also make overly sugary glazes and sauces for the same reason. It's the same as calling General Tso Chicken a Chinese dish. Outside of glazed baby back ribs and some sauces the majority of BBQ is dry rubbed and seasoned meats smoked over a low flame for a long period of time. Remember that if you're not in the region for where a style of food is made that they'll cater it to local tastes and expectations and finding something authentic in these areas will be very difficult if not impossible. You are better off finding non competition bbq recipes (which use more salt and sugar for the purposes of food judging) that originate in its respective region and making it yourself.
