Did you make the demi glace yourself OP? I was going to make some beef stock today but my bones went bad. I'm super disappointed.

I'm really sorry, but all of this except the steak looks like a fifth grader binge watched Chopped and wanted to make a dinner with whatever his parents had left in the fridge.
steak (6.5/10) > salmon (3.5/10) > celeriac (3.5/10) > kombu (2/10) > that horrible horrible looking dessert (1/10)
I hope to god that none of you or your friends actually study culinary because if so this quite embarrassing.

>None of us have any culinary training.
Then I'd bet money that it tasted like shit as much as it looks like shit.
I'm forever scarred by the kombu/carrot pinwheels. I know that tasted like ass. Kombu isn't for eating like that.

Chillax, son. It was just some friends having a good time, trying to step it up a notch. Sure the presentation could've been better, but whatever. I'm sure it tasted fine.

>> No.11410431

The shrimps look weird, rest looks good. When you try fancy food /ck/ will always find some flaw, while they will usually be kinder to a beginner. That being said, it looks a tiny bit pretentious, still not bad.

Speak for yourself, my dude.
Speaking as the sous at the best restaurant in my state I can say with authority the what OP made is garbage, sure, but at least he's trying.
That first course is indeed very halloweeny in the way that it almost made me gag.

Try mastering simple things, like the mother sauces, before attempting modernist Michelin style plating. Plating is overrated bullshit anyways. What's a pretty plate matter if your food tastes awful.

And there's frankly nothing good to say, except that the steak seems well cooked.
Why don't you get off /ck/ if you don't like talking about food and cooking?

>>11410785
Kombu is a BIG flavor and is leathery as fuck. It's primarily used to make extremely flavorful stock, as in miso. In fact, it's rarely used outside of making dashi. There's no way they enjoyed eating boiled kombu wrapped in carrots. I just can't fathom how this person invented this dish in their mind.

>> No.11410881

they probably thought "wow kombu sounds fancy" at their asian market instead of researching other types of seaweed like a non-retard
