I usually fine dice an onion and a bunch of garlic and sweat it down in olive oil first, then add the crushed tomatoes. Then spices (oregano, black pepper, red pepper flakes) as I feel like it.

you can add all kinds of shit, like kalamata olives, artichoke hearts, pretty much whatever the fuck you feel like. italian food in general is pretty easy

one of the best things to do with fresh cooked pasta sauce is seafood pasta. I generally cook up some angel hair in salt water, then do mussels/clams plus whatever the fuck leftover saltwater fish I have chunked up in white wine for about 5-6 minutes. Then you throw in a scoop of crushed tomato based sauce (I usually just stick with olives for the add on although I really like artichokes) cook for 2 minutes then throw it on the pasta.

"Italian" food is stupid easy and pretty versatile depending on your tastes. Just don't serve it to real italians, they are the biggest food autists in the world.

Basic "gravy" i make. Use some passata or chopped canned tomatoes (with added basil if u can find it. Sweat a lot of garlic and chopped onions in olive oil. Put pork/beef mince - salt pepper. Wait till browned add the tomatoes (make sure there is excess water). Reduce heat. Add more pepper and sugar if too sour/acidic. Add basil andoregano (dried). Never heard of Italian gravy here. I'm quite positive that that would be what here is known as Neapolitan ragù (Rau' in Neapolitan).
The recipe is almost correct but the meat is wrong and the final result does not resemble a correctly done Ragù.
This is a link of a very well done sauce but it is in Italian only, but it shouldn't be difficult to follow.
PS: that sauce must cook on *minimum* heat for at least 5/6 hours to allow the meat to separate

It literally varies from town to town or village to village.

Honestly tho, the "Italian gravy" is a North American thing because it was cheap to make.

As long as you have decent tomatoes (crushed) and some good soup bones it will come out perfect. And you will need some diligent kids or family to stir the sauce throughout the day.

The secret is that you go to church for an hour or two and let the sauce simmer alone without stirring. At the end of the day, anything with a good marrow and good tomatoes will result in a good sunday gravy.
