Roasted and salted okra chips are good as fuck. More importantly, I have this really strong comfy memory of eating an amazing soup/stew in front of a campfire on a cold night that had okra in it. All I remember about it is the okra and how good it was. It was the first time I ever had a soup with mainly vegetables in it, I was probably like 4 or 5. Sorry, but okra is great in soups and stews.
Chicken, sausage and okra gumbo is wonderful on a cold day in the fall or winter
I grow it every year (okra is stupidly easy to grow and take care of), and we usually stew it down as a side dish with the holy trinity until it's really thick and no longer slimy, then mix it with rice.

Celery, when done well, can be an amazing addition to many dishes.

With that said, I can't stand raw or undercooked celery, and I feel like it needs to be chopped up pretty well. Huge chunks of it can ruin the texture or flavor of dishes, especially when a huge amount of it is used in proportion to what is being made.
