Love raw beetroot.

Julienne apple, beetroot and carrot with some onion. Toss them in a mustard and vinegar dressing. Serve over some spinach and lettuce.

I have problems with eggplants and bell peppers, but only ingested in a decent amount. I can eat pretty much any food on the planet. I knew an executive chef that grew an intolerance to wheat, non-celiac, after consuming way too damned much of it. Breathing it in was fine, he could tolerate a small amount, but a sandwich would send him to the hospital.

Only tried that recently despite a long life of pickled beets.
It's good and I recommend it.
Don't be fooled by some of the recipes out there, by the way; you absolutely want some sour in there. Beets are very earthy and sweet, and you want some acid to counter it.

Same here OP. Well last week at least. I got a few packages of these for $1 each and they were well worth it. Wouldn't pay the original like $4 a package price though.
Very strange tasting but I enjoyed them. Never had anything like it. I do find it funny that they're trying to make beets hip. I hope they attain avocado status.
