Hey /ck/ I'm gonna be making some fried rice soon and I'm looking for things to go in it. Normally people do pees and carrots but I'm not a fan of either so that's not happening, carrots aren't so bad so maybe those but definitely not pees. So far I've got:
>Chicken
>Onions
>Bean sprouts
>Eggs
>Maybe some green onions on top
Anything else I should add or any tips on how to make good friend rice beyond the basic way to make it would be appreciated as well>

I would suggest only putting in ingredients that you want to eat.
Other than that, cold rice or hot rice, wok or large frying pan, soy sauce or fish sauce, oyster sauce or golden mountain sauce, above all -don't mush up the rice grains. That's my trigger. Allow the grains to remain whole. Otherwise you're just making mush. Respect the whole grain of the rice.

I second oyster sauce. Plain garlic fried rice is god tier too. Even if it's not plain dont skimp on the garlic

Just watch some street vendor videos. Cold rice is shit if you have already over-cooked the rice to begin with. Hot rice work fine if you steam your rice instead of boiling it.
Other than that, fried rice is as awesome as the ingredients you put in it.
Don't think that a butane hot plate offers enough heat for you to just pile ingredients in. You're better off cooking (sauteeing) ingredients on their own, then frying the rice, adding cooked ingredients.
Don't over-crowd the heat source. Let the rice fry.
Don't make steamed rice mush with steamed veg. Cook the ingredients separately . Add them together at the end.

I don’t understand this autism over keeping the rice intact and separate. Slightly mushy rice is god tier

My bad. Special Fried Rice is a separate dish that is clearly Scottish, and needs to be respected.

Your list looks pretty good to me. It's pretty Mich how my roommates mom does it. She's from China so I tend to trust her on Chinese food

Sometimes she uses sweet and sour pork. It's always damn good. I don't understand why she never wants to eat it, but I won't complain about a free meal every day.

I'm not autistic, and if you don't have a problem with mushy rice, then godspeed.
And your post is completely grounding for me. Really, you have to cook for your customer.
Your opinion is shit, because I think you'd change your mind if given a choice between bowl1 and bowl2, but also your opinion is what sets the norm.

I think you just think it’s more impressive or something so you prefer it on that basis. Mushy rice is objectively more satisfying texture wise.

Stop. My favorite fried rice that someone else makes is kinda mushy. Also, as a kid when I worked in a Chinese place my goto food was fried rice with gravy (brown sauce), no sprouts.
There is no thought of trying to impress. If you like it like that, then make it like that.
