Hey /ck/, a forester buddy of mine got me some chestnuts and I don't have a clear idea of what to do with them appart from jam. Would you have some recipe you'd be willing to share ?

The best stuffing I've ever had in my life had chestnuts in it. Don't have a recipe and I don't think I could recreate it if I tried, but that Thanksgiving was the only day I've eaten so much so fast I ended up puking.

I've done roasted chestnut gnocchi before that were pretty damn good- you have to know how to do gnocchi by feel, for sure, because chestnuts have a pretty different moisture/starch level than potatoes, but they can be made pretty equivalently. Roast them, pass them through the finest seive/tamis you have access to while still hot, then make gnocchi as usual. That with a brown butter sauce (bonus points: emulsify in some veal jus or similar reduction) and some roasted mushrooms is pretty godly winter food.

Wrong kind of chestnut for that. You want horse chestnuts for conkers. Don't eat them though
