And more primitive forms of preparation of a carcass with combination of smoking and roasting, ie. on a spit or some such other contraption, are exactly that; primitive by necessity and not as a statement against the convenience of modern appliances. The Indians that taught the first settlers of the Carolinas their way of preparing meat weren't making barbecue, and neither were the settlers themselves. The evolution and spread which created regional variation even within states is what barbecue is. I defy you to go anywhere else in the world, find a restaurant specializing in meat, and demand a kilo (I'm assuming that's your customary unit, apologies if you're also American) of meat for which preparation began yesterday and also costs nearly nothing. You'd be laughed at, and rightly so, because it's so uniquely American. Come to think of it, the only place that does something similar is Boer food, but even they're more influenced by traditional European cooking with a good deal more sausage and roasting.
