Some Vietnamese food is a fusion of local and French ingredients and techniques. The banh mi obviously is but many of the ingredients are unknown in French cuisine so it's definitely fusion and not French alone.

Most Vietnamese cuisine is not French at all though, only a handful of their dishes are related.

You could make your own, there are only two parts that are 'hard' to get, one is the pickled vegetables (daikon and carrot mostly) and the other is the bun.
You could use an actual baguette but there are also a lot of banh mi recipes online, look for one that uses a small portion of rice flour in the mix, that's likely to be closer to the original. Vietnamese bakeries in Vietnam never share their recipes, they're family secrets, so there's no official recipe and every bakery has their own version so you really just want to get close enough for you.

You can buy those pickled vegetables in Vietnamese and Chinese stores but you could also easily make your own, they're quick pickles, not slow six-month ones and making a 5-minute quick pickle with grated carrot/daikon will be fine.

Pate, cilantro/coriander, laughing cow cheese, grilled chicken with some spice rub, you can make or buy all that stuff yourself of course.

I've spent a fair amount of time in Vietnam, studied Vietnamese there and even took a cooking class there once (rice paper rolls and something or other).

Vietnamese cooking isn't particularly difficult, it's just a different set of techniques and ingredients is all, it's easy enough to learn.

BTW, any of you Calibros who've never been to one of the infamous Vietnamese coffee shops in San Jose or Orange County, you're missing out. They don't go nude anymore (at least not in SJ, since SJPD started cracking down on that a few years ago), but lingerie coffee is still pretty enjoyable.

Yeah, you're probably right but I think once you spread it on a roll with pickles and grilled meat, it doesn't matter very much whether it was a French pâté or Vietnamese pâté. And actually I prefer the French one anyway.
So, I'd say that any pâté you can get would probably be fine. The Viet one is a bit chunkier I guess but it's still basically just pâté.
