Horse is pretty good if you don't overcook it. It's very lean. Kind of beefy but maybe a little sweeter.
You can definitely use ground horse in just about any dish where you'd usually use ground beef. I used to do that a lot back in the 80s because it was cheaper.

Much of what is known about its behavior comes from Steller's observations on the island, documented in his posthumous publication On the Beasts of the Sea. Within 27 years of discovery by Europeans, the slow-moving and easily caught mammal was hunted into extinction for its meat, fat, and hide.
