where the fuck has musubi been all my life? I've been trying to figure out how to make something that scratches the same itch sushi does but cheaper and possible to bulk prep, and I think this is it dudes.

Not the op and I’ve only made musubi once, but it was good. Much simpler to make than a sushi roll. Sushi rice does take a while, just because of the soaking, but that doesn’t make it any harder.

If your rice falls apart you probably used longer grain rice, see if you can find medium grain or short grain, it's much stickier and clumps together well
the worst rice to use is "instant rice", it's long grain boil in a bag type, it's always loose and won't stick.

I don't think floppy seaweed is good in bulk, gets a little tough and chewy. :You can cut that to order.

Do you know about onigiri./omusubi? Just Bento introduced me to recipe after recipe as well as great techniques years ago..

I really like yaki onigiri the most and I would imagine for batch cooking, you'd find this a great way to warm up some frozen onigiri with that nice caramelized salty good crust.

I buy a lot of short grain Rico or Diana brand valencia rice, which is popular with hispanics. It's really an easy to buy and as sticky as risotto. Get your hands on some various brands of furikake or make your own. Just some sesame seeds are nice, if you toast them. There's some great french's onion, fried shallot, dehydrated jalapeno and garlic chips now, if asian stores are rare for you. I also like to sprinkle sumac tangy za'atar, or chili-lime-salt on rice.
