Is this a legitimate concern? I fry fish and chicken in both vegetable oil and canola oil pretty much interchangeably. Vegetables I fry in olive oil or vegetable oil. Am I doing it wrong?

Tape, the plant comes from turnip and us part of the cabbage family, brassica.
In the UK a while ago complained, was offended, about the association with the oil and sexual assault if the same name. Seemed she did not understand the difference. Was widely ridiculed in the media for this, ignorance. I think canola and rape are different.

Only use an oil with a smoke point that matches or exceeds the temperature you are cooking at. I use extra virgin olive oil for low heat frying (350-375 max), coconut oil for baking (350 max), and avocado oil for anything higher than that (400+).

I use lard, tallow, butter, ghee, ie. animal fats. I have an idea to buy fatty cuts from the butch, slice them to bits, store the bits in ice cube trays, freeze them. When I need to fry something I take a bit of frozen fat from the freezer and pan fry the oil out of the fat. This would not be a purified fat like lard or tallow, but it is much cheaper by the pound, and still mostly the same thing, fat.

I once forgot I had an oiled pan heating on the stove and when I noticed the acrid smell I rushed back into the kitchen. It was smoking pure white and a had a very different smell than just lightly blue smoking oil. A tiny littel bit of blue smoke wont harm anyone, as soon as you put some food in the pan the temps will drop immediately.
