I'm honestly not a huge fan of coffee but I've been trying to get more into it recently and find some ways to prepare it that suit my palette better.
One of the things I've tried is grinding my own and it shows promise but I haven't found a bean I really like yet.

I've tried these three, hate the first two medium roasts, the third one is much better but only okay.

Can anyone recommend some good dark roasts to try?

desu if you're fine with pre-ground, I've found Café Bustelo to be the best for my taste. Nice and dark, consistent taste, cheap, no obvious filler, fine grind for maximum extraction.

Seems like you have a pre-revision Porlex grinder, which has very inconsistent grinds the coarser you get, which is necessary for a French Press. Inconsistency affects taste.

As for your bean choice, Ritual and Volcanica aren't regarded as good roasters, and it's quite possible that you bought stale beans. I know Ritual had some supply chain issues a few months back and were shipping bags that were over 3 months old.

Folgers while also stale, has the budget to invest in doodads like nitrogen flushing for aroma and vacuum sealing tech which preserve the flavor.

My suggestion would be to stop using the French Press, and purchase a pour over set, such as a Kalita Wave 185, a gooseneck kettle and a brewing scale. Pour over requires a medium coarse grind which your Porlex can accomplish, and has a cleaner, less gritty taste than the Press.

Beans are subjective, but I would suggest a blend to start with, which is not only cheaper but easier for beginners. I suggest Counter Culture's Hologram if you can't find a local roaster. It is a great medium roasted blend, with sublime chocolaty notes.
