Commercial kitchens tend to use either hard rubber or plastic since they can withstand the heat of an industrial dishwasher.

If you want a 7" thick 48x32" behemoth of a butcher block, I doubt that guy has experience working on a butcher block that large and heavy, depending on the wood used it could be 300lbs+ of wood. Requires the proper equipment and large enough quantities of wood in large 7" thick chunks.

That being said, if you just want a small countertop board for your home kitchen, that guy for sure is gonna be top notch quality and reasonably priced compared to BooS.

i have those but are unfinished because of some defects in the factory, the didnt pass inspection
they were raw and without a drop of oil
my mom was dumb enough to swipe a wet cloth on one of them and it bent then broke
then i took some liquid grease from my grease collector (i collect edible grease and greased paper towels for fire and fuel sometimes) and rubbed a lot of it in the other surviving one
then put it in an oven
then did it again, because wood can take a lot of oil/grease
i didnt want to put any sadolin wood protection because its base is nitro, or even worse the gasoline smelling one, only edible oil such as pig fat, butter, cow fat, sunflower oil, corn oil, olive oil...
it soaked a lot, and the heat killed the germs and the smell
so i found some bees wax and melted it, then spread it all across, rubbed in every spot, then heated it again for a bit longer
it came out godlike
the water doesnt even penetrate it anymore, not even in the places the knife made scrapes
i rarely use it since its large, i cut maybe whole roasted pigs on that, or debone a large boiled cut
paid nothing for the 3 boards
i never used teh 3rd one because its too big
