I've gutted enough fish in my day. It's not a big deal, and doesn't smell bad at all really, particularly if you're dealing with fresh fish you've just caught; just makes a bit of mess with the blood if you're not careful. The issue in the case of this video is that crustaceans are mostly bottom feeders and scavengers, eating rotting carcasses and sometimes literal shit on the sea floor.

You have to make sure the guts are tied off and stuff before you try to remove them. If you were to pop them open and spill shit all over the interior of the carcass, you'd likely spoil the meat with E coli contamination (barring extensive damage control after the fact). The digestive system is largely self-contained, and needs to be removed as such.

FYI if your shrimp arent "de-veined", they have the entire digestive system intact, and most likely traces of fecal matter, sand, and other things they've ingested.

Some farmed shrimp are starved before being processed so their digestive tract is completely empty, but then its all asian farm shrimp thats been raised on tons of unregulated chemicals, medicines and hormones that all damage the surrounding environment around the farm.
