Higher heat. The yolk cooks slower than the rest of the egg because it's thicker there and therefore further away from the hot surface of the pan, so you just need the heat hot enough to crisp the bottom before the heat gets to the yolk.

It's super easy in a wok. Get oil smoking hot, crack in the egg, then remove it before the yolk cooks.
