There search term is "emulsifier". I use sodium citrate for cheese sauce all the time, it's super easy and allows you to make sauce out of cheese that won't work nearly as well with a roux or milk. And it stays together at much lower temperatures too, so it works very well for dipping sauces. Have you ever heard of a STEAK burger? Ever notice how it's still a patty, and not just a cut of steak on a burger? That's because they usually grind/make the patties out of steak, which is higher quality beef. Even then, most places won't let you order a burger cooked less than medium. If you're cooking a burger from ground beef bought at the store, you need to cook that shit to 155 (final rested temp) AT LEAST, preferably 160 aka medium-well on the way to "well done".

I think prime rib is only really good medium rare and bloody, and most steak cuts on the line between medium rare and medium. Eating below medium is always a gamble.
