i'm sure it's similar all the world around but when it gets sold here, you typically only get the florets and for some reason the texture and "farty" smell/taste it gets when you cook it pushes people away. little do they know the stalk is some of the best eating when prepared properly and where most of the fiber is actually at.

This, and it's basically true of all vegetables. I can remember my mom boiling fresh corn on the cob for fucking 15 minutes until the kernels were flavorless mush. Same with fresh english peas and she'd boil brussel sprouts for an hour until they were just mushy sulphur bombs that made me literally vomit into my plate when she forced me to eat them. Green beans, too, she'd boil for a couple hours. After I left home and learned how vegetables should be cooked, I love all of them now. Midwest mom's can't cook for shit and she's why I hate womyn to this very day and joined MGTOW.

Kale is no better than other cruciferous vegetables and several other greens, but people have been memed into believing unpleasant = healthy so its bitterness enables them to eat only one or two leaves every few days and feel like they're doing a good thing. That's why kale is popular. It has just the right bitterness and texture for one leaf to feel as health promoting as a whole pound of broccoli.
